Ingredients

  • 2 cups dessicated coconut
  • 1/2 cup almond flour - almond flour is usually made with blanched almonds (no skin)
  • 3 tbs honey 
  • 3 tbs coconut oil
  • 1x lemon zest and freshly squeezed juice

Method

Combine ingredients in a bowl and mix until combined.

Blend in a food processor until mixture forms a thicker texture, so it's easier to form a ball that doesn't crumble.

Roll into balls and coat with leftover dessicated coconut. 

Place in the fridge to firm.
